Iraila
Iraila is the first wine from Remírez de Ganuza that is not based on the Tempranillo grape. It is a wine made with 100% Grenache that comes from two old vineyards in two areas in the upper part of San Vicente de la Sonsierra, la Rad (90%) and Sisabal (10%)
The harvest is done manually in 12 kg boxes and the grapes are manually selected on a selection table in the winery.
The bunches are destemmed and the uncrushed grapes fall by gravity into the fermentation tank, where they macerate in cold for 48 hours before starting fermentation with native yeasts.
During fermentation, gentle pumping over and pigeage were applied daily.
The wine has matured in three containers; a 228-liter French oak barrel, a 265-liter cigar-type barrel, and a 400-liter ceramic vat.
The final blend is composed of 40% from the ceramic vat, 30% from the French oak barrel, and 30% from the cigar-type barrel.
