After exhaustive ripeness controls, the grapes are harvested in the second half of September under a hot, dry climate, yielding perfectly ripe grapes. This wine is made from the first must obtained by bleeding. It then ferments at a low temperature to enhance its characteristic intense and elegant aromas of white fruits.

Santa Margherita
Pinot Grigio
Santa Margherita was the first estate to vinify pink Pinot Grigio grapes into white wine. With this method, the must does not come into contact with the skins, from which it would otherwise acquire its rusty color. After gentle pressing, the must is left to ferment for 10-15 days at 18°C.
After fermentation, the wine is stored at a controlled temperature of 15-16°C in stainless steel tanks until bottling.
